Ingredients
2 teaspoons canola oil
1 onion, chopped
1 bell pepper, chopped
2 cans (15.25 oz.) Black Beans, drained and rinsed
1 can (11 oz.) Fiesta Style Corn, drained
1 can (10 oz.) red enchilada sauce
Salt, to taste
Ground pepper, to taste
1 cup shredded Mexican style cheese
12 small flour or corn tortillas, warm
Sour cream, if desired
Directions
Step 1
In skillet over medium heat, warm oil. Cook onion and bell pepper 3 to 5 minutes, until tender and fragrant.
Step 2
Stir in beans, corn and enchilada sauce. Continue cooking 8 to 10 minutes.
Step 3
Using a potato masher or back of a spoon, lightly smash beans. Season to taste. Sprinkle cheese over top of mixture.
Step 4
Serve with warm tortillas and sour cream, if desired.
