1 cup (120g) whole wheat flour or almond flour
1/2 cup (60g) oat flour (you can make this by blending oats)
1/2 cup (40g) vanilla or unflavored protein powder
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 ripe medium bananas, mashed
1/2 cup (120ml) unsweetened applesauce
1/4 cup (60ml) Greek yogurt (non-fat or low-fat)
2 large eggs or 1/2 cup (120ml) egg whites
1/4 cup (60ml) sugar substitute (like Stevia or Erythritol)
1 teaspoon vanilla extract
1/4 cup (60ml) unsweetened almond milk or any low-fat milk
Instructions:
1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x5 inch (23x13 cm) loaf pan or line it with parchment paper.
2. Mix Dry Ingredients: In a large bowl, whisk together the whole wheat flour, oat flour, protein powder, baking soda, baking powder, salt, ground cinnamon, and ground nutmeg. 🥄🍂
3. Combine Wet Ingredients: In another bowl, combine the mashed bananas, unsweetened applesauce, Greek yogurt, eggs or egg whites, sugar substitute, vanilla extract, and almond milk. 🍌🍏🥚🍬🍦🥛
4. Mix Wet and Dry Ingredients: Pour the wet ingredients into the bowl with the dry ingredients and mix until just combined. Do not overmix.
5. Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. 🍞
6. Cool: Allow the banana bread to cool in the pan for about 10 minutes, then remove it from the pan and let it cool completely on a wire rack. 🌬️
